Rosemary honey (Rosmarinus officinalis) is very light in colour. Its aroma is floral and mild with medium persistence and notes of new wax and a clear, intense and persistent methyl anthranilate component. Its flavour is usually simply sweet, though occasionally there are light acid notes and a greasy sensation on the palate if it is rich in bugloss. Its crystallization will depend on the specific pollens in the honey.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Rosemary Honey can be eaten alone or dissolved in hot or cold drinks. It is the perfect ingredient to make salad dressings, especially for green leafy salads, and the ideal accompaniment to light dairy products such as fresh cheese or yogurt. It is also perfect to use as a sweetener in infusions or in fruit salads. It combines perfectly with desalted or fried cod and with lamb dishes.
