Creamy rosemary honey (Rosmarinus officinalis) is very light in colour. Its aroma is floral and not very intense, with medium persistence and with notes of new wax with a clear, intense and persistent component of methyl anthranilate. Its flavour is usually simply sweet, though occasionally there are light acid notes and a greasy sensation on the palate if it is rich in bugloss. Creamy rosemary honey can be eaten on its own or dissolved in hot or cold drinks. It is the perfect ingredient for making salad dressings, especially for green leafy salads, and an ideal accompaniment to light dairy products such as soft cheese or yogurt. It is also a wonderful sweetener in teas or fruit salads. It combines perfectly with desalted or fried cod and with lamb dishes. Finally, it can be used to make cosmetic products.
